Celebrate Raya with these guilt-free treats

KUALA LUMPUR, June 18 — You won’t want to miss Root Cellar KL (RCKL) & Amazin’ Graze’s guilt-free local-flavoured snacks.
They are the perfect nibbles as you celebrate the Raya season and they will be kinder to your waistline.
Expect items such as Gingerflower Shortbread, Gruyere & Cumin Twigs, Acar Buah, Sea Salt & Cardamom Crackers and Chili Glazed Tempeh & Peanuts from RCKL.
From Amazin’ Graze, you have Rose & Macadamia Granola, Kaya & Pandan Nut Mix and Rendang Nut Mix. You also have healthy Date & Orange Ginger and Pulut Hitam cookies.
These come in gift box and hamper sets that start from RM120 onwards.
It all started when guilt-free snacks purveyors Amazin’ Graze approached RCKL’s Basira Yeusuff and her Agak Agak partner Ili Sulaiman back in April this year.
“It was a completely different target audience from ours but we saw the potential and we wanted to make it Asian-centric which is something we feel we do quite well,” explained Ili.
She also adds that it made perfect sense since good-for-you food is essential during the fasting month.
The challenge started in May when R&D was done to tweak the snacks into healthy bites. “We love butter, cream and all the good stuff you see so we had to find a sweet spot between being healthy yet not lose ou identity of being fun with flavours and ideas,” she said.
The idea was to take a twist on what is usually served at a Raya open house — biskut gunting, shortbread and crackers.
RCKL turned the muruku-like biskut gunting into a savoury one with Gruyere cheese and cumin while the shortbread uses the familiar bunga kantan to amp up the flavour.
Unlike the buttery shortbread we are used to, this version uses coconut oil and coconut milk to emulate butterfat and the water in the butter to create a chewier bite.
For a savoury treat, go for the pickled fruit chutney or Acar Buah, a firm favourite of Ili’s which is must-have during her family’s buka puasa. It pairs well with biryani or as RCKL found out... cheese!
You will find dried plums, orange rind, kumquat and prunes — a different combination from the usual commercial versions — made from a heirloom recipe from one of RCKL’s founders’ nenek.
Ili tells us that it works well with their crunchy Sea Salt & Cardamom Crackers. She adds, “The crackers was like a eureka moment during R&D when we had it with our signature Acar Buah and a hard cheese!”
Another addictive snack is the Chili Glazed Tempeh & Peanuts where the tempeh is baked rather than fried. It also has no processed sugar and uses less salt.
